Bean stew is a healthy and tasty dish. True, it takes a long time to prepare. In addition to daily soaking, you must also cook it for eight hours. Only then will you end up with a fragrant, thick and satisfying meal.
It is necessary

- - bay leaves - 4 pcs;
- - pepper;
- - water - 1.5 liters;
- - garlic - 2 cloves;
- - salt - 2 tsp;
- - tomato paste - 3 tablespoons;
- - onion - 400 g;
- - carrots - 250 g;
- - vegetable oil - 2 tablespoons;
- - bacon - 150 g;
- - black or red beans - 500 g.
Instructions
Step 1
Wash the beans, soak them in cold water for a day. Chop up carrots and onions. Heat vegetable oil in a deep, thick-bottomed frying pan or cast iron, place the chopped bacon there.
Step 2
Fry the bacon until lightly browned. Add carrots and onions to the bacon. Fry, stirring occasionally, for five minutes. Drain the beans and place them over the vegetables. Next, pour boiling water over.
Step 3
After bringing the mass to a boil, reduce the heat to a minimum and cover the cast iron tightly with a lid. Simmer for 8 hours to soften the beans. Make sure that the water does not boil away, add boiling water if necessary.
Step 4
Add tomato paste, pepper and salt half an hour before the end of braising. For a spicy taste, you can add red pepper or adjika. Taste the sauce, adjust the taste with lemon juice or sugar if necessary.
Step 5
Remove the cast iron from the heat when the beans are cooked. Add bay leaf and finely chopped garlic. Keep in this state for 15 minutes. The stew is ready, sprinkle with finely chopped herbs when serving.
