Focaccia is an Italian flatbread typical of the Ligurian region. Real focaccia can be tasted in small bakeries in the town of Recco, they have kept the traditions of cooking and baking this flatbread in ovens. You can learn all the secrets of the craft if you work in such a traditional bakery. But since this is not so easy to do, you can cook focaccia with cheese at home, according to a simplified recipe, but it turns out to be just as tasty with a minimum set of products.
It is necessary
- 250 ml warm water
- 3 tablespoons + 1 tablespoon olive oil or sunflower oil
- 500 g wheat flour
- 1 tsp salt
- 1 tsp dry yeast
- 280 g of any cheese
- 1 tsp a mixture of dry Provencal herbs (rosemary, thyme, basil, peppermint, sage, oregano (oregano), garden savory, marjoram) or fresh basil and dill
Instructions
Step 1
Take a bowl, add 250 ml. warm water and 1 tsp. dry yeast, leave for 10 minutes. until the yeast kicks in (add a pinch of sugar if needed to speed the yeast).
Step 2
Add 3 tbsp. olive (sunflower) oil, 1 tsp. salt, stir.
Step 3
Sift 500 g of flour, knead the dough by hand for 10 minutes, until the dough is smooth and soft and peels well from your hands. Add a little flour or a little water as needed.
Step 4
Wrap the dough with cling film or cover with a damp cloth and leave in a warm place for 40 minutes until the dough rises. Turn on the oven to heat up to 230-270 ° C.
Step 5
Roll out a not very thin dough in the form of a cake with a rolling pin, make several indentations with your finger and pour 1 tbsp. olive (sunflower) oil.
Step 6
Sprinkle with grated cheese and dried herbs (fresh basil and dill if available).
Step 7
Place the tortilla in a greased baking dish or baking sheet. Bake 15-20 minutes until golden brown.
