Step 1

The so-called vegetarian soup is prepared without any type of meat. This soup is very light, well suited for those who follow medicinal or other diets. Another advantage is that it takes a little time to cook. For vegetable potato soup, use clean water. In general, it is better to cook any soup in pre-settled or filtered water. Pour it into a saucepan and bring to a boil.

Cut the onion into small cubes, finely chop the carrots. They will go to the so-called frying. Pour some oil into a preheated pan and fry both onions and carrots in it for a short time. It is worth noting that different housewives use different fats for browning - it can be both vegetable and butter, and sometimes even fat removed from meat broth. But since you are making vegetarian potato soup, use regular vegetable oil.

Rinse the potatoes thoroughly, peel them and cut into strips. Pour the potatoes into a pot of boiling water. When the water boils again, carefully remove the starchy foam formed from the potatoes and put the frying in the soup. It will immediately turn into a pleasant golden color. Season the potato soup with salt to taste.
