If you want to get a more dietary meal at the end, you can skin the meat, but if calories do not play a special role for you, you can leave the skin.

Grate the Parmesan on a fine grater. If Parmesan cheese is not at hand, you can take any hard cheese. In a bowl, combine grated cheese, bread crumbs, and corn grits.

Beat the egg white with a mixer until soft foam. Rub each piece of chicken with a mixture of salt and pepper, dip in the egg white and dip in the breading mixture, line a baking sheet with parchment or baking foil, and place the breaded chicken pieces on top of it.
