Sugar and salt

These are universal spices for any meat, not just pork. For example, lard with salt is very often prepared, usually a glass of salt is consumed per kilogram. It is worth noting that there is no need to be afraid of salting - this noble product does not take too much. During the preparation of smoked pork, salt is used in the form of a brine. Smoked meats, such as ham, are kept in salted brine or boiled. If the pork needs to be fried, boiled or steamed, then it is better to salt the dish at the end of cooking, this will preserve the softness of the meat.

The addition of sugar is not so common in our country, but the Chinese add it to pork with pleasure - they like the sweetish taste.

Different types of pepper

Pepper is the king of spices. It is readily added when preparing lard, using any variety: from the most delicate paprika to hot chili or cayenne varieties. For example, in Hungary, salted lard, rolled in red pepper, is a national dish.

Pork steaks are often sprinkled with a mixture of peppers, but just black ground pepper will come in handy here. The French are lovers of exquisite dishes; they soak pork meat in cognac infused with pepper. Thanks to this, the meat acquires an interesting spicy taste, and the spice particles do not crunch on the teeth.

Pepper should be placed in pork soup at the beginning of its preparation, and in the second courses - at the end. But it is better to throw away the seeds from the pepper - they give little aroma, while giving the dishes their bitterness.

Marjoram, cloves, cumin

Pork sausages are not complete without marjoram. The Germans, who even nicknamed it "sausage grass", treat this spice with special respect. After the Germans, everyone began to add marjoram when preparing various sausages.

Caraway also goes well with pork. It is added to minced pork, used when baking meat. It must be added to stewed cabbage with pork in order to remove the specific aroma of this dish.

Cloves are a versatile spice that goes well with pork. It is very tasty to bake a pork leg in foil, after having abundantly peppered it with clove buds.

Curry and wuxiangmian

The exotic flavor of pork comes from curry or spicy wuxiangmian mix. With curry, the meat can simply be fried in a little oil. And the Wuxiangmian mixture is used in the preparation of Chinese pork.

Horseradish

It is impossible to imagine a roast pig without adding horseradish. Horseradish also goes well with pork hoof jellies and pig ears. For such distinctive dishes, it is preferable to take fresh horseradish, rubbing it yourself.

Garlic, rosemary, bay leaves, savory, onions, nutmeg, white mustard, coriander, parsley, dill, celery are also combined with pork. But this is already a matter of taste. If you do not want to understand all the spices and seasonings for pork, then you can purchase a universal set of pork spices, which includes most of the listed ingredients.
