  • - wheat flour 500 g;
  • - fat-free cottage cheese 250 g;
  • - sugar 200 g;
  • - odorless vegetable oil 8 tbsp. spoons;
  • - milk 6 tbsp. spoons;
  • - yolk 1 pc.;
  • - vanilla sugar 20 g;
  • - baking powder 10 g;
  • - lemon zest.
  • For glaze:
  • - protein 1 pc.;
  • - icing sugar 125 g.

Instructions

Step 1

Mash the yolk with sugar and vanilla sugar, add cottage cheese, baking powder, butter and milk and beat with a mixer. Finally, add flour and lemon zest. Knead the dough with your hands. It should turn out to be quite elastic, but not rigid. Cover it with plastic foil and refrigerate for 30 minutes.

Step 2

Preheat oven to 180 degrees. Roll out the dough in a layer no more than 1 cm thick. Cut out the molds with a glass. Place the future gingerbread cookies on a baking sheet lined with paper, leaving a little space between them. Place the baking sheet in the oven for 20 minutes. If the gingerbread cookies have increased in size and brown, then they are ready!

Step 3

While the gingerbread is baking, add the frosting. Whisk the protein with the powdered sugar. Put three tablespoons of the glaze in a wide large cup, dip a few gingerbread there and stir well with a spoon. Then place the gingerbread cookies on a piece of paper and let them dry. Enjoy your tea!
