Envelopes are part of a compound dish, which is characterized by the presence of a filling and a shell to hold it. For example, the well-known stuffed pancakes. The main requirement for envelopes is a sufficiently thin and elastic material from which they roll. And delicious, of course. After all, they are edible, as well as the filling in them. And to taste, the outer shell should match the inner content.

Instructions

Step 1

The most common envelopes are made from pancakes. To make them, pancakes are made thin and small in size. So, pancake envelopes are open and closed. Opened is simply a pancake folded four times with a liquid filling or a tube rolled from a pancake. Closed pancake envelopes can be folded in several ways.

Envelope with a straw. Place the filling on one edge of the pancake, backing slightly. Roll it over the filling. Then fold inward at the sides. Gently roll up the spring roll and fry in oil with the open edge down to keep the tube from falling apart.

Step 2

Rectangular envelope. Place the filling also on the edge of the pancake, then roll the filled pancake several times, tuck the side edges inward, form a flat envelope, which fry in oil with the edge down

Step 3

Envelope triangle. Place the filling in the center of the pancake, lightly press down with a spoon to flatten it. Fold the two side edges at an angle towards each other. Wrap the bottom edge inward as well. It turned out to be a large triangle with a filling in the center. Fold the corners of the triangle inward on top of each other. Fry in butter with folded corners down.

Step 4

Another common envelope is from a cabbage leaf. It is used to make stuffed cabbage rolls. Boil the cabbage leaf for 1-2 minutes in boiling water. It will become soft like a rag. The secret to successfully folding the envelope is to put the filling on the stalk of the cabbage leaf, i.e. at the junction of the leaf with the head of cabbage. Then carefully wrap the filling in the sheet once, tuck the side edges inward, then fold or roll the cabbage roll, fry it in oil with the edge down.

Step 5

Puff pastry envelopes. Cut a puff pastry sheet into squares. Place the filling in the center, bring the corners of the square together at the top, press them lightly with your fingers. Bake the envelope in the oven.
