Soy milk is a drink made from soy, used as a substitute for cow's milk for allergies to animal proteins, in addition, soy is a rich source of potassium, magnesium and vitamins A and B.
It is necessary
- For soy milk:
- - 1 cup of soybeans;
- - 11 glasses of water;
- - 1/4 cup sugar.
- Kitchenware:
- - blender;
- - a large cup (must hold at least 11 glasses of water);
- - several cups;
- - gauze;
- - wooden spatula for stirring;
- - a container for storing finished soy milk.
Instructions
Step 1
Put the soybeans in a deep bowl and cover with water so that it covers all the beans, leave to soak for 8-11 hours in a warm place. Whenever possible, use purified mineral water rather than raw tap water, as it can give soy milk an unpleasant aftertaste.
Step 2
Top up the water as needed as it evaporates to keep the beans submerged at all times. Transfer the beans along with the water in which you soaked them to a blender, chop, add about four more glasses of water, stir to get a smooth bean paste.
Step 3
Take a large piece of cheesecloth, fold it every 5-6 times, pour the bean mixture into the cheesecloth and squeeze over the jar. Squeeze out as much liquid as possible.
Step 4
Place the rest of the cheesecloth beans in a blender, add three more cups of mineral water and mix until smooth. Squeeze the mixture through cheesecloth again, and then return the remaining beans to the blender, pour two glasses of water, stir and strain again.
Step 5
Boil raw soy milk, pour it into a deep saucepan (so that ¼ of the saucepan remains free) and place over high heat. Stirring constantly, wait until the mixture boils, watch carefully so that the milk does not stick to the bottom of the pan, remove the foam from the surface of the milk (the so-called "Korean asparagus" is then made from it).
Step 6
Add a few drops of cold water to the milk to help reduce foam. Reduce heat over boiling milk and simmer for another eight minutes, stirring constantly.
Step 7
Strain through a fine filter (gauze in four to five layers, coarse calico in two layers, a sieve or microfilter will do). Boil the filtered milk again, add flavors to taste (cinnamon and vanillin, vanilla, chocolate, fruits and berries, honey).
