Viburnum berries are the most useful, healthy product. In terms of the value of vitamins, viburnum is equated to rose hips and black currants. Step 1

Steamed viburnum in Russia was considered a delicacy. There are several ways to float a berry.

Separate the berries from the twigs, rinse well in running water and place in a clay pot, in a cast iron or enamel pot.

Step 2

Add honey at the rate of 4 tablespoons of honey per half a kilogram of berries (1/2 and 1/3 of the weight of berries), pour two glasses of water, close the lid tightly.

Step 3

Put the container on a low heat and steam for 10-12 hours, or longer. Of course, it is better to steam in a Russian stove that keeps the temperature optimally.

Step 4

There is also another way. Put the washed berries in a clay pot, add a little water, no more than half a glass.

Step 5

Close the lid tightly and simmer for 2-3 hours, stirring occasionally. Then rub the viburnum through a coarse sieve and transfer it back to the pot.

Step 6

Add 4 tablespoons of honey or 2 tablespoons of sugar. Pour in two glasses of hot water and steam for another 8-10 hours.

Step 7

Use the steamed viburnum to fill the pies. Boil the jelly. To do this, dilute a glass of steamed berries with two glasses of water. Pour starch or agar-agar powder into the liquid and bring to a boil. The cooled drink helps well with hypertension, stomach ulcers and duodenal ulcers.

Steamed viburnum does not have a characteristic bitterness, and therefore cook compotes, jams with it, add to cakes and pastries.

Step 8

Fresh viburnum can be consumed without any processing with the addition of sugar, honey or cinnamon. Prepare juices from it. Grind one cup of berries and 100 grams of ice (12-16 cubes) with a blender and add no more than a tablespoon of sugar.

Step 9

Viburnum fruits are used in dietetics, they have a beneficial effect on cardiac activity, enhance the contraction of the heart, are used as a multivitamin, fortifying agent. Viburnum berries taste bitter, but when frozen they acquire a sour taste. By the way, of all the berries, viburnum is almost the only one with a bitterness, which is characteristic of good coffee and strong tea. Viburnum is harvested when the berries become soft after the first frost. This is approximately the end of October - November.
