Step 1

The first step is to prepare the cheesecake dough. Pour kefir into a saucepan, mix it with butter, salt. Break an egg into kefir, mix. Heat the kefir, stirring occasionally, to warm the mixture.

Step 2

Take 3 cups of flour and sift through a sieve into a separate deep bowl. Then pour the warm kefir-egg mixture into the flour. Mix everything with a fork. Mix the rest of the flour with baking soda and sift it onto a clean, dry table.

Pour the dough from the bowl onto the flour on the table. Knead the dough using all the flour on the table. Cover the finished dough and leave for 15 minutes.

While the dough is resting, you need to tackle the cheese filling for the pie. Mix grated hard cheese with feta cheese or cottage cheese, break 2 eggs there, mix. Salt the filling to taste.

Mash the rested dough a little again and leave for another 10-15 minutes. Then divide the filling and dough into 4 parts. Roll out each quarter of the dough into a round cake, the thickness of which should be about 1 cm. Put 1 part of the filling in each rolled cake. Pinch the edges of the dough to the middle.

Put all the resulting round pies with the seams down, leave for 5 minutes. Sprinkle them with flour and gently roll them out so that the dough does not break and the filling does not fall out. Bake all 4 pies in a skillet in vegetable oil. The cake is fried on both sides until golden brown. The cakes become very fluffy when baked. Then each finished cake can be slightly greased with butter.

Let the cakes cool slightly so they can be cut into pieces. Otherwise, the hot cheese filling may leak out when cut.
