It is necessary

  • - pork ribs - 1.5 kg;
  • - onions - 3 pcs.;
  • - honey - 1 tbsp. l.;
  • - hops-suneli - 1 tsp;
  • - red bell pepper - 1 tbsp. l.;
  • - ground black pepper - 1 tsp;
  • - dried cumin (coriander) - 1 tbsp. l.;
  • - lemon - 1/3 pcs.;
  • - bay leaves - 3 pcs.;
  • - sunflower oil;
  • - salt;
  • - fresh herbs (dill, parsley, cilantro);
  • - deep thick-walled frying pan, saucepan (cauldron).

Instructions

Step 1

Rinse the pork ribs under running water, pat dry with paper towels and divide into separate parts. Then place them in a deep bowl.

Step 2

In a separate bowl, combine all the spices - red sweet and black peppers, suneli hops and coriander (the latter can be pre-grinded in a mortar), as well as salt. Pour the mixture over the meat and stir.

Step 3

Squeeze the juice out of the lemon (1 tablespoon) and add it to the bowl along with honey and 1 tablespoon of sunflower oil. And then mix everything together again so that each rib is covered with spices and seasonings.

Step 4

Then cover the bowl with a lid or cling film and leave to marinate for at least 30 minutes. Moreover, the longer the ribs are marinated, the tastier they will be in the future. Therefore, they can be put in the refrigerator and left even overnight.

Step 5

Once the time is up, take a skillet and pour some sunflower oil into it. When it's hot enough, transfer half of the ribs to the skillet and fry them until a blush appears on both sides. Once they're browned, transfer them to a cauldron or thick-walled saucepan. Put the next batch in the pan, which also needs to be fried, and then move to the pan.

Step 6

After that, pour some water into the pan and pour it into the pan over the ribs. Add more water to the pot so that the ribs are 70-80% filled with it.

Step 7

Peel the onions, chop them into thin half rings and add to the pan to the meat. You can also do the other way: pour a little oil into the pan where the ribs were fried and sauté the onion until golden brown, and then transfer it to the saucepan.

Step 8

Now place the ribs on the stove, bring to a boil and add bay leaf and some salt. Then reduce the temperature to a low setting, cover and simmer for 1 hour.

Step 9

After the time has elapsed, remove the pan from the stove and let it brew for 10-15 minutes. And then put the food in portions along with the broth, add chopped fresh herbs if desired and serve along with garlic donuts or fresh bread.
