Egg storage methods depend on external conditions and the degree of their pretreatment. The optimal conditions for storing chicken eggs in the refrigerator are:
- Refrigerating chamber temperature + 2-4 ° С.
- It is recommended to place eggs with the pointed end down.
- It is advisable to arrange the eggs so that they do not touch each other.
- It is necessary to provide them with air access.
Subject to these recommendations, the shelf life of chicken eggs will be three weeks. The countdown should be carried out from the date of packing indicated on the package.
The maximum storage time for eggs without refrigeration should not exceed two weeks. In this case, it is advisable to store them in a cool dry place, at temperatures up to 10 ° C. The maximum storage temperature should not exceed 20 ° C.
Hard boiled eggs can be stored for up to ten days in the refrigerator. If the shell is cracked during cooking, the shelf life of boiled eggs is reduced to four days.
Quail eggs last longer, up to 60 days in the refrigerator and one month at room temperature. But waterfowl eggs are recommended to be consumed within two weeks. They need to be stored in the refrigerator, and during the cooking process they should be heat treated for at least five minutes.
Please note that only fresh chicken eggs are suitable for fried eggs, soft-boiled eggs and eaten raw. After seven days of storage, it is better to use them only for baking and hard boiling, and the scrambled eggs from such eggs are well fried.
