The name "brushwood" means a product made from unleavened dough, deep-fried. The dish got its name due to its crispy effect and appearance, reminiscent of sticks (twigs). There are many options for making brushwood, the most common of which is vodka-based brushwood.
Products for brushwood on vodka
Essential products.
- 3 eggs (egg yolks)
- 2 tbsp. a spoonful of sour cream
- 2 tbsp. spoons of vodka
- 1 tbsp. spoonful of sugar
- 100 ml of milk
- flour - how much dough will take (about 3 glasses)
- 0.5 liters of sunflower oil (for frying)
- icing sugar
Cooking brushwood
Whisk the egg yolks and sugar in a large bowl. Add milk and sour cream, stir until sugar is completely dissolved. Pour in vodka.
The vodka in this recipe serves as a kind of baking powder. Do not worry that brushwood cannot be given to children due to the presence of alcohol. After frying in boiling oil, no trace of alcohol will remain.
Sift the flour through a sieve.
It is better to take flour for brushwood of the first grade, since brushwood is a product made from unleavened dough. Flour of the highest grade is more suitable for pastry products (buns, pastries, cakes).
Add one third of the flour in a bowl to the egg mass, mix well with a spoon. Then knead the dough with your hands. Add the remaining flour in portions until a tough but elastic dough is obtained. The dough should be firm, fall well behind the hands, but at the same time remain soft and not crumble.
Roll the finished dough into a ball and let it rest for 20 minutes. Cover with a towel to prevent crusting.
Cut off half of the resulting dough (from the given amount of products, a large amount of dough is obtained, you cannot roll everything out at once). Roll out the dough thinly on a floured table top. Cut the resulting layer with a sharp knife into strips 10 cm long and 3 wide. Make a small incision in the center of each strip, turn one end of the strip through it.
Heat vegetable oil in a wide, shallow saucepan. As experience suggests, as soon as bubbles begin to appear in the oil, it is heated to the desired temperature. Throw the strips into the oil in small portions. "Twigs" will slightly increase in volume. Fry until golden brown.
Remove the finished brushwood on a paper towel and drain off excess oil. Transfer the brushwood to a dish, sprinkle generously with powdered sugar. You can pour sugar-honey syrup over the brushwood, but this is more likely not brushwood, but the Tatar dish Chak-Chak. The recipes for these dishes are similar. The difference is in the shape of the baked goods and in the fact that our brushwood is sprinkled with powdered sugar. And Chak-Chak is poured abundantly with sugar-honey syrup.
Serve warm brushwood for tea. Children love to drink it with milk. And just like that, crunching is also very tasty.
