The zucchini appetizer with rice differs from many others in that it is very tasty and satisfying. This means that it can even be served as an independent dish. I suggest you prepare such an interesting and spicy snack for the winter.
It is necessary
- - zucchini - 2 kg;
- - carrots - 1 kg;
- - tomatoes - 1 kg;
- - onions - 1 kg;
- - rice - 2 glasses;
- - sunflower oil - 1 glass;
- - salt - 4 tablespoons;
- - sugar - 0.5 cups;
- - garlic - 5 cloves;
- - vinegar - 50 ml.
Instructions
Step 1
First of all, remove the skin along with the seeds from the zucchini. Chop the remaining pulp with a knife into small enough pieces. Peel the onions and carrots. Chop the first finely, and pass the second through a medium-sized grater.
Step 2
With the washed tomatoes, do the following: Chop them either with a meat grinder or in a blender bowl. By the way, this vegetable can be replaced with tomato paste. To prepare a zucchini snack with rice, it will take 500 milliliters.
Step 3
Chopped zucchini, carrots, onions and tomato paste - mix all this in a saucepan, the volume of which is at least 5 liters. Then add sunflower oil, as well as granulated sugar and salt there. Under a closed lid, after bringing to a boil, simmer this vegetable mixture over low heat for half an hour. Do not forget to stir the mass periodically.
Step 4
After the time has passed, pour the pre-washed rice into the vegetable mixture. Cook, stirring constantly, until the cereal is ready. Once this happens, add ingredients such as vinegar and garlic pressed through a press to this mass. Having mixed everything as it should, distribute the resulting mixture over the previously prepared sterilized dishes. Roll up the snack jars and cover them upside down.
Step 5
Store the jars that have cooled down with a snack in the cellar. Zucchini with rice for the winter are ready!
