Plum cake made from yeast dough is a real classic. For baking it, you can use fresh fruits of various varieties, thick jam and even jam. The main thing is not to skimp on the filling and not to rush. Keep in mind that yeast dough does not tolerate fuss.

    • 1 glass of milk;
    • 12 g dry yeast;
    • 1 egg;
    • 2 tablespoons of vegetable oil;
    • 2 tablespoons of sugar;
    • 1/2 teaspoon salt
    • 3 cups flour.
    • Spiral pie with apples and plums:
    • 5 large apples;
    • 4 tablespoons of water;
    • 2 tablespoons lemon juice
    • 5 tablespoons of sugar;
    • 4 tablespoons of starch;
    • 700 g plums;
    • 1 egg;
    • powdered sugar.
    • Plum Jam Pie:
    • 500 ml thick plum jam;
    • 3 tablespoons of starch;
    • oil for greasing the baking sheet;
    • 1 egg.

Step 1

Whichever filling you choose, you first need to do the dough. Heat milk, mix it with dry yeast, sugar, salt, vegetable oil and egg. Stir the mixture thoroughly and pour the sifted flour into it in portions, without ceasing to stir. Knead the finished dough, put it in a lump, cover the container with a towel and put the semi-finished product in the heat for 1-2 hours. During this time, the dough should greatly increase in volume.

While the dough is coming up, decide which cake you want to bake. An unusual spiral pie with fresh plums and apple filling turns out to be very tasty. Peel the apples, cut into small cubes, put in a saucepan. Add sugar, water and lemon juice. While stirring, cook the apples until soft. Then add starch to the mixture and stir well. Cool the filling.

Cut the plums in half and remove the seeds. Roll out the dough into a thin layer and cut it into 3 strips. Place the apple filling in the middle of each and pinch the edges so that each strip turns into a sausage. Lubricate the round springform with oil. Place the dough sausages in it in a spiral shape.

Stick the halves of the plums between the turns of the spiral, pressing them tightly against each other. Try to stick the plums straight. Grease a baking sheet and use a rolling pin to transfer the dough to it. Cut a piece of the remaining dough, roll it into a narrow rope and place along the edge of the dough laid on a baking sheet. You get a low side. Sprinkle the surface with starch (you can use a strainer for this). Spread the plums from the jam on top.

Roll out the remaining dough and cut the strips with a simple or curly knife. Arrange them on the surface of the cake in a wire rack. Stir the egg and brush over the dough with it. Before being sent to the oven, the cake should stand for 15-20 minutes. After proving, place the baking sheet in a preheated oven and bake until golden brown.
