    • For lean dumplings soup:

    • For dumplings:
    • 9 tbsp flour;
    • 3 tbsp water;
    • 1 tsp sunflower oil;
    • salt.
    • For lean mushroom soup:
    • 2 liters of water;
    • 12 mushrooms;
    • 2 onions;
    • 2 pickled cucumbers;
    • 4 tablespoons tomato puree;
    • 1/2 lemon;
    • 20 pcs. olives or olives;
    • 1 tbsp capers;
    • 2 tbsp. l. vegetable oil;
    • salt
    • Bay leaf
    • black peppercorns;
    • parsley or dill.

Instructions

Step 1

Prepare the dumplings for the soup: combine flour, vegetable oil and salt in a small bowl. Bring three tablespoons of water to a boil and pour in a thin stream into the flour mixture, stirring constantly so that there are no lumps. Place the dough on a board and knead thoroughly with your hands, shape into a ball and cover with a towel.

Step 2

Wash and peel the potatoes, cut them into small cubes. Peel the carrots and onions, grate the carrots on a coarse grater, finely chop the onion into cubes or rings.

Step 3

Boil 2.5 liters of water, salt, lower the potatoes, reduce heat and cover the saucepan. Put a frying pan on the fire, pour in the vegetable oil, when it warms up, put the onions first, then the carrots and fry over low heat for three to four minutes. Dip the sautéed vegetables into the pot about ten minutes after the potatoes.

Step 4

Form dumplings: roll the dough into a thin sausage and cut it into small pieces, or tear off pieces from the dough and dip into the soup. Boil the dumplings for about five to seven minutes, then chop the herbs, put them in a saucepan, pepper and boil for no more than one minute.

Step 5

Lean mushroom soup Take champignons, and if possible, other fresh mushrooms (porcini, boletus). You can use different mushrooms together. Wash and trim the base of the legs. Examine them and trim away the blackened spots, then cut into cubes.

Step 6

Peel and finely chop the onions, fry in vegetable oil for a minute, add tomato puree and simmer for two minutes. Then cut the pickles, olives or olives into small cubes - any way.

Place the chopped mushrooms in a saucepan, cover with 2 liters of water, bring to a boil, remove the foam, reduce heat, add bay leaves, black pepper and cook for about ten minutes. Then add salt, onions fried with tomato, cucumbers, a spoonful of capers, olives. Cook for another ten minutes.

Step 8

Pour the soup into bowls and add to each lemon wedge, chopped herbs, some chopped olives.
