Pumpkin jam is a delicious treat that is very easy to prepare. At the same time, the jam retains most of the valuable trace elements and vitamins.
It is necessary
- - fresh pumpkin pulp (3-4 kg);
- - granulated sugar (3, 5 kg);
- - food soda (10 g);
- –Lemon acid to taste.

Step 1
Take a pumpkin and rinse thoroughly under running water. Next, divide the pumpkin into several large pieces and place in water with baking soda for 10-15 minutes. Then remove the pumpkin from the solution and rinse under cold water.
Step 2
Take a deep basin, add half of the sugar, add 270 ml of water and stir. Place the squash, cut into small pieces, in the sugar syrup. Place the basin gently on a large burner and simmer over moderate heat, stirring occasionally. Cook until it is like a jam.
Step 3
When the mixture thickens, add the remaining half of the sugar to the bowl and pour in 270 ml of water again. When the color of the jam becomes dark and the consistency thickens, turn off the burner and stir with a wooden spatula for a while. As a result, put citric acid in the jam and stir again.
Step 4
Pour the finished pumpkin jam into sterilized jars with a volume of 250-500 g. Close tightly with lids and put to cool under a blanket. Pumpkin jam can be stored both in a cold place and at room temperature.
Step 5
Additionally, try adding grated lemon or orange zest to the jam. So the preparation will acquire pleasant citrus flavor notes.
