The usual dishes we eat every day are not suitable for a festive meal. And sometimes, for no reason at all, you want to pamper yourself and your family with something unusual, beautiful, appetizing and very tasty, but easy to prepare. Stuffed potatoes meet all these requirements.

Instructions
Step 1
Choose potatoes that are medium-sized, flat and round. Wash them thoroughly from dirt and sand. Remove the potato skins with a knife. Rinse the peeled potatoes again in cold running water and place on a clean dish. Set the dish aside.
Step 2
Take a pod of bell pepper, preferably red or yellow. Wash the peppers under cold running water. Use a sharp knife to cut the stalk of the pepper in a circle. Pull gently on the “tail” to pull out the entire stem along with the seeds.
Step 3
Wash the peppers you have already removed the seeds from in cold water. Cut the pod lengthwise into several thin strips, and then chop into small cubes. Transfer the resulting vegetable mass to a non-metallic bowl, set aside.
Step 4
Peel one onion, chop it and add to the bell pepper. Cut the potatoes in half and carefully remove the core. Finely chop the flesh of the potatoes, add to the mixture of pepper and onion. Pepper the vegetables, salt, add a little olive oil.
Step 5
Cut the cheese into thick slices. Take half a potato and fill it with the vegetable mixture. Place the potato on a greased baking sheet or covered with baking paper. Cover the stuffed potato half with a slice of cheese.
Step 6
Place the baking sheet with the stuffed potatoes in the preheated oven. Bake at 180 degrees for 30-40 minutes. Put the baked potatoes on green salad sheets, sprinkle with finely chopped herbs and finely grated cheese on top. The dish is ready.
