- - 150 ml of water;
- - 300 g butter;
- - 1/8 tsp salt;
- - 2 eggs;
- - 600-650 g flour (depending on the variety);
- - 1 tbsp. l. vinegar 6% (you can replace 2 tablespoons of lemon juice).
- for cream:
- - 8 yolks;
- - 1 liter of milk;
- - 2 tsp vanilla sugar;
- - 2 tbsp. regular sugar;
- - 0, 5 tbsp. flour.
Instructions
Step 1
Beat eggs with salt. Dissolve vinegar in cold water. Add water and vinegar to beaten salted eggs, mix well.
Step 2
Butter, while cold, cut into cubes or grate on a coarse grater. Pour flour on the table, add butter and chop with a knife. Add eggs and vinegar and knead the dough.
Step 3
Divide it into ten or twelve pieces and shape into balls. Cover with plastic wrap and refrigerate for an hour.
Step 4
After an hour, take baking paper and roll all the balls on it thinly. Cut a circle out of each rolled ball (about twenty-six centimeters in diameter). Use a fork to prick each circle.
Step 5
Without removing any debris, place the paper on the baking sheet. Turn on the oven and set the knob 180 degrees. Preheat and place a baking sheet. Bake each circle for 10 minutes.
Step 6
Mix the yolks with sugar and vanilla sugar. Add flour and stir well. Bring milk to a boil and pour in hot, stir. Place the mixture on the stove and cook over low heat, stirring constantly, until thickened. Chill the cakes and cool the cream.
Step 7
Put the chilled cake in a mold and brush with cream. Place the second cake on top and grease again. Collect the whole cake in the same way. Coat the top and sides with cream. Use a blender to chop up the remaining trimmings. Sprinkle them over the cake. Place the cake in the refrigerator for six or seven hours.
