- 150 grams of spinach
- 1 pomelo,

- 10 grams of rice vinegar,
- 20 ml vegetable oil
- 5 grams of sugar
- 10 grams of honey

- 10 ml sesame oil
- 500 grams of salmon fillet, or trout, salmon, chum salmon, sockeye salmon,

Instructions
Step 1
Mix well the ingredients of the dressing: 10 g each of rice vinegar and sesame oil, 20 ml each of vegetable oil and soy sauce, sugar, ginger and pepper.
Step 2
Blanch the fish for about 10 minutes, remove the skin and cut into slices. Mix honey, mustard and soy sauce, marinate the fish in the mixture, putting it in the refrigerator for 15 minutes.
Step 3
Combine green onions and spinach, pour over the dressing.
Step 4
Peel and separate the pomelo from the films, divide each slice into 3 parts.
Step 5
