Boiled mushrooms are ideal preparations for the winter. How nice it is to cook mushroom soup in winter, or fry with potatoes, or even make fresh mushroom hodgepodge. Store them in small portions in plastic bags to save space in the freezer.

Step 1

Peeled mushrooms must be thoroughly rinsed from sand and remaining dirt. Then you need to take any suitable container (a large saucepan, bucket or basin), put the mushrooms there and fill them with fresh running water. Press a little from above with a large plate so that the floating mushrooms also appear under water. It is necessary to soak the mushrooms for at least an hour and a half, so that all the sand that has not been washed off is soaked.

Step 2

Remove the mushrooms from the water, rinse them again in clean water. Cutting into small pieces or boiling them whole is a matter of taste. In a clean saucepan with a volume of about 3 liters, boil 1.5 liters of water, put the mushrooms there and reduce the heat. Salt a little, put peppercorns, garlic (whole head) and black currant leaf. Boil mushrooms over low heat for 15-20 minutes.

Carefully remove the boiled mushrooms with a colander and let cool slightly.

Boiled mushrooms themselves are hardly a ready-made dish, most likely a stage before subsequent preparation: salting, pickling, freezing for the winter.

The simplest option is freezing. Taking the workpiece out of the freezer, they can also be prepared in any way.

To freeze the mushrooms, arrange them in small plastic bags, in medium portions, about a pound each. Make sure there is no excess air in the bags. Place the tea bags neatly in rows in the freezer. You can store blanks in the freezer for no longer than a year.

Thus, many types of mushrooms can be harvested: white, boletus, boletus, honey agaric, moss and oyster mushrooms. Pickles are the only exception, as they cannot be eaten after cooking due to their bitter taste.

Immediately after defrosting, boiled mushrooms can be prepared in any way: in the form of a soup or for a roast with potatoes, as a filling for pies or pancakes.

Step 5

Do not discard the broth after boiling the mushrooms. On such a rich and rich broth, you can cook a very tasty soup or make a sauce from it for meat or duck.

You can also save the sauce for later by pouring it into a small plastic bottle, close the lid tightly, and put it in the freezer. After a short defrost, it can be used immediately, so you will have a fresh mushroom broth at your fingertips at any time of the year.
