Lemon Cherry Cupcakes Recipe

To bake lemon cherry muffins, you will need:

- 150 g dried cherries (or raisins);

- 1 lemon;

- 4 eggs;

- 500-600 g of wheat flour;

- 250 g sour cream;

- 150-200 g of butter;

- 200 g of granulated sugar;

- 1 bag of vanilla sugar;

- 1 bag of baking powder;

- 1/3 tsp baking soda.

Pour boiling water over the dried cherries for 20 minutes. After this time, drain the water and dry the cherries on a paper towel.

Whisk or use a mixer to whisk the eggs, sugar and vanilla into a thick foam. Add sour cream, melted butter. Gradually add the flour and baking powder to the mixture and mix well. The consistency of the dough should be like thick sour cream.

Wash the lemon thoroughly, pour over it with boiling water, grate the zest, and squeeze the juice from the pulp and add together with the zest to the dough. Put baking soda and prepared cherries there.

Grease the muffin tins with butter, dust lightly with flour and pour the dough into them. Bake the muffins in the oven for 20-25 minutes at 200 ° C.

To make delicious muffins using this recipe, you need to take the following products:

- 75 g of honey;

- 50 g of sugar;

- 50 g margarine;

- 110 g flour;

- 50 g of chopped walnut kernels;

- ½ tsp. baking soda;

- 1 egg;

- vanillin.

For glaze:

- 100 g of fine granulated sugar;

- 50 g of chopped nuts.

Put honey, margarine and granulated sugar in a bowl and melt them over low heat, not boiling. Pour wheat flour, sifted through a sieve and mixed with half a teaspoon (no top) of baking soda, into the melted mixture, add vanillin, walnut kernels, chopped in a mortar and separately beaten egg. Mix everything very thoroughly to get a homogeneous mass.

Brush the molds with melted margarine. Divide the dough into 10-14 servings, place in the tins and gently knead with your hand. Bake the muffins in the oven at 180 ° C for 15-20 minutes.

Remove the finished muffins from the molds. Cover with a towel and let cool, then cover with icing. To prepare it, combine granulated sugar with 2 tablespoons of water, put on low heat and, while stirring, heat the syrup until the sugar is completely dissolved, add any aromatic substance (vanilla, ginger, cinnamon, lemon, orange zest) and stir. Apply the prepared icing to the cooled muffins and sprinkle with chopped walnut kernels.
