To make cottage cheese for a child at home, they take a special children's kefir. It turns out cottage cheese delicious, delicate in structure and very healthy.

A "water bath" is made. These are two pots of different sizes, with water poured between them. The main thing is that there is free space between the bottoms. Pour water into a large saucepan and put on fire. When the water boils, pour fresh baby kefir into a small bowl.

A low heat is maintained, and after a couple of minutes the kefir will begin to curl up. As soon as whey appears from the edges, you need to move the curd away from the edges to the center with a spoon so that the whole mass is well warmed up.
Step 4
After about 10 minutes, the temperature of kefir will be about 60 degrees. You can check this with a thermometer. It is not necessary to heat the mixture harder, since then a tough cottage cheese will turn out, and there will be no beneficial bacteria in it.
Step 5
Remove both pots from the heat without removing one from the other and leave the mass to settle for half an hour. Then replace the hot water in the lower saucepan with cold water and let it stand again for half an hour.
Step 6
During this time, the curd mass will cool and thicken, which will allow it to be filtered through a strainer. After all the whey has drained, the baby curd is ready at home.
