Step 1

Determine whether you are going to cook young or old goat meat. In a kid, the fat is white, in an adult goat it is yellowish. Old goat meat is tougher and rougher, so it takes longer to cook. In addition, it is important to know whether you will be cooking a domestic goat or a wild one. In the second case, the meat has a rather specific smell, which your homemates may not like. It is better to prepare another dish from a wild goat - for example, stew with vegetables. Pre-cut the meat into small pieces, put it in a ceramic or enamel bowl and fill it with marinade for about a day.

There are two ways to cook kid meat, depending on how you are going to serve it. For the first method, chop the brisket or shoulder blade into 2-4 fairly large pieces. Remove grease and films. This is primarily necessary in order to remove the odor. Rinse the meat well in cold running water.

Step 3

Bring water to a boil. Place the pieces of meat in a saucepan and pour boiling water over them so that the water covers them slightly. Place the pot over low heat. Control the process. The meat should be soft. Then add the coarsely chopped carrots and onions to the saucepan. You can also use celery and spices to taste. Season the meat with salt.

Cut the kidney meat prepared in this way into portions just before serving. Fried or boiled potatoes, rice porridge are suitable as a side dish. The rice should be crumbly. White classic or tomato sauce is suitable for boiled goat meat. In general, everything that is usually used for cooking boiled lamb is suitable for such meat.

You can cook boiled goat meat, for example, with mushrooms. In this case, prepare the goat meat as usual: rinse and remove the films. Cut the meat into portions, pour boiling water over and cook over low heat. Cook the goat meat along with vegetables: celery, onions and carrots. In principle, such meat is ready to eat without any additions. But you can stew the mushrooms separately, and then mix them with goat meat. Mashed potatoes and green peas can be a side dish for such a dish.
