Blancmange is a delicious dessert made from natural milk, invented by the French back in the sixteenth century. The literal translation is "dairy-based opaque jelly." Blancmange was very popular in the Middle Ages. In particular, it was on the list of dishes prepared by Matilda of Tuscany for the reconciliation of Pope Gregory VII and Henry IV.

The classic blancmange is made from almond milk, starch (or rice flour), sugar and various spices. Modern chefs put gelatin, fruits, nuts and other additives in blancmange.

Blancmange with fruit can be prepared according to the following recipe.

Ingredients:

• 2 tablespoons of gelatin;

• 2 glasses of water;

• 1 liter of milk;

• sugar - to taste;

• berries (currants, strawberries, raspberries, cherries);

• fruit - at your discretion;

• 1 glass of cherry juice;

• 1 glass of cream.

Pour gelatin with warm water and leave to swell. Then stir and bring to a boil over low heat. As soon as the mixture has cooled, strain and divide the mass into two parts. Add cream to one, cherry juice to the other and add sugar to taste in both parts.

Pour some of the gelatin with cream into a special dish or a glass bowl, let it cool a little, then put the fruit, again pour some of the gelatin with cherry juice and put the fruit again. Continue alternating layers until you finish the gelatinous base. The main condition is that the layers should not mix with each other. Garnish the blancmange with compote cherries, chopped kiwi and mint leaves. Then put it in the refrigerator until it solidifies.

Both adults and children will appreciate the curd blancmange. First, dissolve gelatin in warm water, let it swell and stir thoroughly. Whisk sour cream, cottage cheese, vanillin and sugar until smooth. Divide the resulting mixture into two molds. Put a spoonful of cocoa in one, and nuts in the other. Dilute the gelatin with a little milk and pour half of the mixture into the molds. Then place a layer of fruit and cover with the rest of the gelatin. Put the resulting dish in the refrigerator for a couple of hours.

For curd blancmange you will need:

• 1 kilogram of cottage cheese;

• 3 tablespoons of gelatin;

• 0.5 liters of milk;

• a glass of thick sour cream;

• 1, 5 tablespoons of sugar;

• vanillin;

• cocoa;

• nuts and fruits - your choice.
