Blancmange is a cold dessert that is essentially a milky sweet jelly. The dessert is based on milk, sugar and gelatin. Cow milk or almond milk is traditionally used. Thus, to prepare a blancmange for a vegan or lean table, it is enough to change only one ingredient - gelatin.
It is necessary
- - peeled almonds - 100 - 150 g;
- - water - 750 - 800 ml;
- - sugar - 3/4 cup or to taste;
- - agar-agar - 3 tsp

Step 1
Blancmange for a vegan or lean table is prepared on the basis of almond milk.
Making such milk at home is not at all difficult. First of all, it is necessary to grind peeled almonds. In this case, there is no need to clean up the kernels
from brown skin.
Step 2
You can grind almonds using a coffee grinder. Place the almond powder obtained in this way in a saucepan, cover with hot water and bring to a boil.
Then, for best results, rub this hot mixture with a hand held hand blender.
Next, place a cloth napkin in a colander and pour out the hot, mashed almond mixture. Pour out the mass in small portions to make it easier to work.
Strain by squeezing the cake. Keep in mind that gauze is not good for this.
Step 3
Now pour the prepared almond milk into a clean saucepan after rinsing it with ice cold water. This is done so that the milk does not burn during the blancmange cooking process.
Add granulated sugar to the milk. The approximate amount is approximately three quarters of a 250 ml cup, but you can add more or less depending on your personal taste.
Step 4
Agar is added immediately. But before adding this component, carefully read the instructions on the package. The fact is that agar-agar is available in two types:
- in the form of powder;
- in the form of flakes.
In this case, the method of preparing the product for use is different. For example, the manufacturer generally recommends pre-soaking the agar flakes, while powdered agar is not required. There is also a difference in the amount of agar agar, depending on whether you are using flakes or powder.
The recipe contains data for agar-agar powder purchased in an ordinary supermarket.
Step 5
So, add granulated sugar and agar agar to almond milk, put a saucepan over medium heat and bring the mixture to a boil.
Then reduce heat to low and simmer, stirring constantly, for the next 5 minutes.
Step 6
It is recommended to prepare the blancmange molds in advance. It is best to use silicone muffin molds. They need to be rinsed with cold water.
Jelly prepared on the basis of agar-agar hardens quickly and at room temperature, therefore, after removing the almond mixture from the heat, immediately pour it into molds.
Cool and refrigerate to cool the dessert.
As a rule, the blancmange is ready to use within 30 - 60 minutes.
