To make the lamb kebab juicy, soft and aromatic, the meat must be properly marinated. There are many ways to make marinades for meat, each of which is good in its own way.
Marinade recipes
Simple lamb marinade
For 1 kg of meat you will need:
- 2-3 medium-sized bulbs;
- 0.5 tsp sugar;
- table vinegar - 30 ml;
- pepper and salt to taste.
Cut the onion into thin rings, add to the prepared meat, salt, add pepper and cover with vinegar diluted with granulated sugar. Place the mutton under the load and refrigerate for 24 hours.
Oriental marinade
To prepare this marinade, you will need:
- 5 tbsp. red wine (it is better to take dry);
- 5 tbsp. soy sauce;
- 3 tbsp. vegetable oil;
- 3 cloves of garlic;
- chili and salt to taste.
Chop the garlic, mix with oil and wine, season with soy sauce. Season with salt and pepper. Pour the prepared marinade over the lamb and leave in a cool place for 8 hours.
Lamb marinade "Fragrant"
With this marinade, the meat will acquire an unusual spicy taste and delicious aroma. To make a marinade, you will need:
- 5 tbsp. vegetable oil;
- 2-3 tbsp. cognac;
- 2 tbsp. lemon juice
- Cayenne pepper;
- a mixture of herbs for Italian cuisine;
- salt.
Mix all ingredients. Cut the lamb into pieces and lay out on a flat surface. Using a cooking brush, brush the meat with the cooked marinade, after half an hour turn the meat over, brush it again with the marinade and leave for another half hour.
Honey marinade
To prepare the marinade, you will need the following products:
- 120 ml of table white wine;
- 0.5 cups of natural honey;
- 60 ml of soy sauce;
- 60 ml of vegetable oil;
- 2 minced garlic cloves;
- pepper and salt.
Mix all the ingredients and pour the prepared meat with the resulting mixture. Vegetable oil and honey in this marinade will make the meat extraordinarily tender and juicy. And garlic will add spicy notes to the taste of barbecue.
A Few Tips for Making a Kebab
To make lamb barbecue a success, buy meat with fat layers. If you did not manage to find such meat, stringing mutton on a skewer, alternate the meat with pieces of bacon. There is absolutely no need to eat lard, it is necessary so that, during frying, the melted fat is absorbed into the pieces of meat, making them juicy and soft.
Lamb kebab marinade is not customary to excessively season with acids. You can simply add vegetable oil and spices. If you still want the meat to acquire a pleasant sourness, try not to overdo it with lemon juice or vinegar, as they can make the meat dryish.
