Spinakopita is a delicious Greek pie made from filo puff pastry stuffed with feta, spinach, onions and herbs. With the help of spinakopita, you can diversify the usual pies and surprise guests and friends, especially since this Greek dish is prepared easily and quickly.

3 tbsp. olive oil; - 1 large onion; - spinach - 1 kg (frozen, but fresh is best); - a bunch of parsley and half a bunch of dill; - 3 eggs (beat); - 200-300 g feta (can be replaced with feta cheese) - butter - 100 g; - filo dough - 1 pack (not less than 225 g); - pepper and salt

Step 1
Olive oil is heated in a frying pan and onions are fried. When the onion becomes soft, spinach is added to it. If the spinach was frozen, it is defrosted beforehand, and the excess liquid is drained. The spinach is fried for 5 minutes. After that, the stove turns off and the spinach cools down to room temperature.
Step 2
While the spinach is cooling, mince the parsley and dill. Dill, parsley, feta, salt, pepper, and beaten eggs are added to spinach. All ingredients are gently mixed until smooth.
Step 3
The butter is melted and the filo sheets are laid out in a baking dish. Each sheet is oiled. There should be at least 5-6 layers, but in general, their number is not limited by anything other than your taste. The filling is laid out on the dough and covered with filo sheets, greased with butter. The number of sheets is the same as at the bottom of the cake.
Step 4
For beauty, the top of the closed pie is cut with a very sharp knife into future portions. The pie is baked in a preheated oven for about 40 minutes at a temperature of 190 degrees. The finished cake should have a golden crust. The pie can be served hot or cold.
