Instructions
Step 1
Separate the wings, legs and breasts. Set aside the lower legs separately for broth or for some other dish. Cut the thighs in half, cut the wings at the joints, and cut the breast into pieces with walnuts.
Step 2
Beat saffron, kefir, olive oil, garlic, orange zest, pepper, lemon juice in a blender to obtain a marinade.
Step 3
Place the chopped chicken in a saucepan and add the marinade. Place the pot with marinade in a cool place for at least 6-8 hours.
Step 4
Cook the coals and skewer the chicken, separating the legs, thighs, wings and breasts on different skewers, because the cooking time is different for different parts of the chicken.
Step 5
Grill the kebab at a distance of 3-4 centimeters over fine coals of medium heat, often smearing with the remnants of the marinade and turning quite often. Cooking time for one portion of barbecue is from 8 to 15 minutes.
