Baursaki are small donuts fried in a lot of oil or fat. This is a traditional dish of the nomads of Central Asia. They are served as a separate dish, as an addition to shurpa or tea, in which case they are sprinkled with sugar. It is not difficult to make baursaks, you can make them from sour, rich dough and with cottage cheese.

Step 1
Classic baursaks First you need to make a dough. Dissolve the yeast in milk, add sugar and a little flour, leave for 15 minutes. The consistency of the dough should resemble pancake dough. After the dough rises, add the remaining flour and beat in the eggs. Season with salt and stir. Knead a dough that is not very tough. Then put the dough in a warm place for half an hour or an hour. Then knead the dough again and leave again for a couple of hours. When the dough rises for the last time, knead it, form strands and cut them into circles. Let them come up a little, and then fry in a lot of vegetable oil until golden brown.
Step 2
Butter baursaksMake a safe dough from flour, sugar and yeast. Leave it on for 20-30 minutes. Then roll it into sausages with a diameter of 2-3 cm and cut across into circles 2-3 cm long. Fry in hot oil until golden brown.
Step 3
Quick baursaks Add one teaspoon of baking soda, the same amount of salt, a little butter, one egg to a glass of milk. Knead the dough and after about 20 minutes you can fry the baursaks.
Step 4
Baursaki from cottage cheese Mix cottage cheese, sour cream, sugar, eggs, soda and salt. Then add flour and knead the dough. Sprinkle the table with flour and roll out the dough in the form of a rope. Cut into 3 cm long circles, form into balls. Heat vegetable oil in a deep bowl and fry until golden brown. Then take out the balls, let the fat drain and sprinkle with powdered sugar on top.
