Beans are one of the oldest plants in the legume family. Its benefits are explained by the composition, which contains starch, proteins, carbohydrates, carotene, amino acids, as well as vitamins A, E, K, group B, PP, C. In addition, a rich mineral composition: calcium, iron, potassium, copper, sulfur and zinc. Beans are most useful in salad. In the presence of vegetables, herbs and dressing, it is better digested and tastes many times better.
It is necessary

- 1, 5 tbsp beans;
- salt;
- 4 onions;
- vegetable oil;
- 1 tsp ground coriander seeds;
- ground black pepper;
- ground red pepper;
- 1 tbsp. l soy sauce;
- 1 bunch of cilantro;
- 3 cloves of garlic;
- 2 tbsp. l lemon juice;
- parsley and dill.
Instructions
Step 1
Soak the beans in cold water overnight; it should be in it for at least eight hours. Rinse it well in the morning and cook over medium heat.
Step 2
Bring the beans to a boil and drain immediately. Then fill it with cold water again, bring to a boil again and drain. Repeat these steps at least two to three times.
Step 3
After that, put the pan on low heat and cook the beans for twenty to thirty minutes, be sure to make sure that they do not boil over. At the end of cooking, for five to seven minutes, add a little salt to the water in which it is boiled.
Step 4
Throw the finished beans in a colander and leave for a while to drain all the water from it. Then transfer to a deep bowl in which you will make the salad.
Step 5
Next, prepare the dressing. Peel and cut two onions in half rings, fry them in a little vegetable oil for five to seven minutes until slightly golden brown. Remember to stir occasionally.
Step 6
Then add ground coriander, salt, red and black pepper to the fried onions, immediately remove the pan from the heat. Mix everything well and send hot to the prepared beans.
Step 7
Then add the soy sauce, finely chopped cilantro, two chopped onions and garlic crushed through a garlic press. Squeeze the juice out of the lemon and fill the salad with it. Stir the salad and season with light salt if necessary.
Step 8
Then cover it with a lid or cling film on top and leave to stand in a warm place for twenty to thirty minutes, so that it is saturated with all the seasonings, and the onions give their juice.
Step 9
Before serving the salad, mix well for the last time, transfer to a beautiful salad bowl, garnish with fresh dill and parsley. So it turned out to be a very tasty, hearty and healthy salad.
