Pancakes are a traditional Russian delicacy associated with a wonderful and fun holiday - Shrovetide. But it sometimes takes a lot of time to make pancakes, but you still really want to enjoy such a treat. In this case, thick pancakes that can be baked very quickly are ideal.

- 2 eggs;
- 0.5 l. kefir;
- flour;
- half a teaspoon of baking soda;
- vinegar;
- vanillin;
- 3-4 tbsp. l. Sahara;
- salt;
- 1 apple (or a handful of raisins)
- Yeast pancakes:
- 2 eggs;
- 2 tbsp. l. Sahara;
- 1 kg of flour;
- 40 g yeast;
- 3 tbsp. l. butter;
- 0.7 liters of milk;
- salt.
- Flavored pancakes:
- 3 eggs;
- 4-5 st. l. Sahara;
- 0.5 liters of cream;
- half a teaspoon of baking soda;
- flour;
- salt
- cinnamon
- vanillin to taste.
Instructions
Step 1
Recipe number 1. Beat eggs lightly with sugar, pour kefir into the mixture and stir thoroughly. Add vinegar slaked soda, vanillin, a pinch of salt. Then add flour in small portions, stirring vigorously to prevent the formation of lumps. The result should be a dough that resembles thin sour cream in consistency. Peel the apple, core it and cut into small cubes, add to the dough. Instead of an apple, you can use raisins, or combine both products - be guided by your taste. Pour sunflower oil into a hot skillet and add it periodically during frying. You can completely fill the bottom of the pan or make small pancakes. Serve with honey or sour cream.

Recipe number 2. First, prepare the dough. To do this, dilute the yeast in 400 g of warm water and, stirring well, add half the flour. Place the container with dough in a warm place for about an hour. During this time, the mixture should fit. Then add sugar, salt, yolks of two eggs and butter to it. Stir everything thoroughly and gradually add the remaining flour. Heat the milk slightly and add to the dough, stirring well. Put the container back in a warm place, and when the dough rises, stir again and add the whipped egg whites. Let the dough rise once more in a warm place, then lower it. Start baking the pancakes when the dough rises again.
Step 3
Recipe number 3. Mix the yolks with sugar, add cream, vanillin, soda, salt and cinnamon, mix well. Gradually add flour to the mixture so that you end up with a dough similar in consistency to liquid sour cream. Beat the whites separately and add to the dough, stir well. Bake the pancakes in vegetable oil.
