Rice pancakes are a fairly simple, but at the same time very tasty dish, which can also be prepared from the finished rice porridge left over from breakfast, which will significantly save you time and your family budget.

- 200 g of rice;
- 750 g of milk;
- 50 g raisins;
- a pack of butter;
- a glass of flour;
- lemon
- orange;
- 20 g of white dessert wine.
Instructions
Step 1
For rice fritters, prepare a bowl of rice, preferably round grain. Also take two small containers, in one of which pour seven hundred and fifty grams of milk, and in the other - a small amount of white dessert wine. Do not forget about citrus fruits: you will need lemon and orange, or rather their zest. Also make sure you have butter, flour, sugar and fifty grams of raisins on your counter before cooking.
Step 2
Soak the raisins in advance in a container with dessert white wine. Pour the milk into a small saucepan and boil, season with salt to taste and add all the rice. Cook the rice porridge, stirring constantly. When it's done, remove it from the heat and wait until it cools completely.
Step 3
Grate the orange and lemon zest with a fine grater and mix it with soft butter, sugar and yolks, add the soaked raisins. Mix the entire resulting mass thoroughly and pour into the rice porridge, then mix well again.
Step 4
Pour deep-frying oil into a saucepan or deep saucepan and heat to a boil. While the oil is heating, take the whites and beat them thoroughly until white foam. Mix the resulting mass with flour and sugar and gently pour into the rice porridge. Mix everything well.
Step 5
With a tablespoon, you need to take the rice mass and carefully lower it into boiling oil, fry the rice pancakes until golden brown, and then remove. You can put several pancakes in butter. After you take out the finished pancake, place it on a cotton napkin and drain off the unnecessary oil. It is better to take out the pancakes with a fork or a special spatula. At the end, ready-made rice pancakes can be sprinkled with powdered sugar and beautifully laid out on a plate; rice pancakes should be served hot or warm.
