The French salad "Mimosa" has nothing to do with the domestic salad of the same name. It is distinguished by its extreme lightness, some piquancy and French sophistication. It is very simple and quick to prepare. The specified amount of food is enough for 2 servings.

It is necessary

  • - egg - 1 pc.;
  • - parsley greens - 20 g (1 bunch);
  • - lettuce leaves - 20 g;
  • - pitted olives - 6 pcs.;
  • - mustard - 0.5 tsp;
  • - wine vinegar - 2 tbsp. l.;
  • - olive oil - 6 tbsp. l.;
  • - ground black pepper - a pinch;
  • - salt - 0.5 tsp.

Instructions

Step 1

Hard boil the egg. Rub it on the finest grater.

Step 2

Rinse the parsley, remove the coarse stems, finely chop the leaves. Rinse lettuce leaves and tear with your hands (you can chop coarsely). Cut each olive in half lengthwise.

Step 3

Cooking the sauce. Combine olive oil, wine vinegar, mustard. Add black pepper and a pinch of salt. Stir. The sauce is ready.

Step 4

Mix egg with chopped parsley, salt and pepper (to taste). Put some lettuce leaves on the bottom of the plate, put the egg and parsley mixture on top. Pour the sauce over the salad just before serving. Decorate with olives. The lightest salad is ready!
