Many recipes require pounded chicken breasts because the meat needs to be cooked evenly. Broken chicken breasts are used in dishes such as Marsala-infused chicken, chicken piccata, and stuffed chicken.
There are a couple of ways to beat off a chicken breast, and the use of each one depends on the recipe.
1. Place the chicken breast on a piece of waxed paper and cover with a second piece of waxed paper.
2. Use the flat side of a hammer to beat off the breast, moving from the edges to the center.
3. Continue beating until the thickness of the beaten breast is uniform.
How to beat off a chicken breast for stuffing:
1. Using a sharp knife, make a longitudinal cut in the breast so that it is almost cut into 2 flat pieces.
2. Uncover the sliced breast, place on a piece of waxed paper and cover with another piece.
3. Use the flat side of a hammer to beat off the breast, moving from the edges to the center.
4. Beat off the breast until it is half a centimeter thick.
