Bird cherry fruits are rich in sugars, organic acids, pectins, tannins, flavonoids, vitamins, phenolcarbolic acids. Bird cherry is dried, various drinks and desserts are prepared from it.
Cherry drinks
Drinks made from this aromatic berry are a good addition to your regular diet. They are rich in vitamins, minerals and are well absorbed by the body.
Prepare bird cherry syrup, for it you need to take:
- 1 kilogram of berries;
- 1 liter of water;
- 1 kilogram of granulated sugar.
Pour a little water over the berry and bring it to a boil, then cook the bird cherry for 10-15 minutes, stirring with a wooden spatula. After that, turn off the heat and cool the berry, then rub it through a sieve. Add sugar, water to the resulting puree and cook the syrup until the desired thickness. Pour the finished drink into bottles and store in the refrigerator.
Bird cherry also makes an excellent compote, to cook it, take:
- 400 grams of sugar;
- 1.5 liters of water;
- 1 kilogram of bird cherry.
Wash the berries with warm water and blanch for a few minutes. Then place them in an enamel pot and cover with hot syrup made from water and sugar. Leave the bird cherry in the syrup for 5-6 hours, then remove it from the pan and place it in sterilized jars. Bring the sugar syrup to a boil and pour over the berry, roll up the jars, turn them over and wrap them up. After 8 hours, transfer the compote to a cool place for storage.
Ground bird cherry can be added to dough for sweet baked goods. Bird cherry flour gives it a pleasant taste and aroma.
Bird cherry jam
You can cook jam from the fruit of bird cherry, in winter it will delight you with its taste and aroma. To do this, take:
- 3 glasses of water;
- 1 kilogram of berries;
- 1, 2 kilograms of sugar.
Select ripe fruits, remove the stalks from them and rinse the bird cherry under cold water. Soak the processed berries in boiling water for 2-3 minutes, then place them in an enamel bowl.
Boil a thick syrup from sugar and water, in which the berries have been blanched, and pour over the bird cherry. After 1, 5 hours, put a bowl of bird cherry on medium heat and bring to a boil. Reduce heat and cook bird cherry jam for 20 minutes, skimming off the foam.
Pour the finished jam into prepared jars and seal them with lids. Store in a cool, dark place.
Decoctions and jelly from bird cherry are used as an astringent for indigestion.
Bird cherry filling
The bird cherry filling for baking is prepared as follows. Dry berries are ground through a coffee grinder or pounded in a mortar. Then pour boiling water over it and cover with a lid. When the ground berry becomes soft, fine granulated sugar is added to it and mixed well. The filling is used for making pies and pies from butter dough.
