Rinse the rice under running water and dry thoroughly. Then take a blender, pour rice into it and grind until flour is formed. If you don't have a blender at hand, you can use a coffee grinder, but the quality of the flour in this case will be lower.

Pour the finished rice flour into a bowl or onto the surface for making the dough so that the flour forms a small hill. Make a hole in the center of the slide. Break three eggs and pour into the hole. Add salt to the eggs and start stirring. At first, the dough can be stirred with a fork, but then it is preferable to knead it with your hands. To prevent the rice dough from sticking to your hands, sprinkle them with flour or brush with sunflower oil.

Knead the dough until smooth, then cover with parchment or a towel and let sit at room temperature for 20-30 minutes. After this time, the dough will be ready for rolling out. The dough must be rolled out until a thin layer is formed. To do this, you can use a rolling pin, in the old fashioned way, or a dough rolling machine. With a special knob-regulator, you can set the desired layer thickness. In this case, the dough layer turns out to be especially uniform and does not break.

Let the rolled out layer of dough settle for 10-15 minutes, and then start slicing. Cut the rice dough into 4-5 mm strips. After slicing, the rice pasta can be boiled immediately, or it can be stored in the refrigerator for up to three days. If you put them in the freezer, the pasta will be stored there for up to one month.
