It is necessary

  • For the test:
  • - medium-sized eggs - 2 pcs.;
  • - flour - 600 g;
  • - sugar - 60 g;
  • - soft butter - 2 tbsp. l.;
  • - sesame seeds - to taste;
  • - instant yeast - 1 tsp;
  • - milk - 300 ml.
  • For filling:
  • - beef liver - 300-350 g;
  • - a large tomato (you can take two medium ones) - 1 pc.;
  • - beef - 650-800 g;
  • - pickles (medium size) - 2-3 pcs.;
  • - lettuce leaves;
  • - mustard - 1 tsp;
  • - fat sour cream - 3 tbsp. l.;
  • - soft butter - 2 tbsp. l.;
  • - a little ground black pepper;
  • - some fine sea salt;
  • - classic ketchup - 4 tbsp. l.;
  • - medium onion - 2 pcs.

Instructions

Step 1

If you are using store-bought buns, you can skip the first part of the recipe.

Preparing the bun dough.

Pour 300 ml of warm milk into a volumetric cup, add a teaspoon of yeast and 60 grams of sugar (preferably cane sugar) to it. Stir until sugar dissolves. We put the bowl in a warm place for 20 minutes.

Step 2

After 20 minutes, add two tablespoons of butter to a bowl of milk. Beat two eggs and add to the milk mixture. Add the sifted flour and knead (with your hands or with a spoon) the dough. Cover the cup with a clean tea towel and leave to rise for 90 minutes.

Step 3

Cooking the filling.

Soak the beef in cold water for 10 minutes. We wash the meat and beef liver. Cut into medium-sized pieces and pass through a meat grinder.

Step 4

Stir the resulting minced meat well. Pour some milk into a bowl with minced meat, salt a little, pepper, mix and form flat cutlets (about 8-10 pieces). If you beat the minced meat a little, then the cutlets will turn out to be more juicy. Fry cutlets in vegetable oil until appetizing and crispy.

Step 5

In a small cup, mix a teaspoon of mustard, three tablespoons of sour cream (better homemade, it tastes better) and ketchup without additives. Cut two salted or lightly salted cucumbers into slices. Cut the tomato and two onions in the same way.

Step 6

We take out the dough and wrinkle it, leave it warm to rise again. Divide into 8-10 parts and form balls, from which we make blanks for buns. Sprinkle the blanks with a small amount of sesame seeds or seeds, put on a baking sheet. We bake for about 40 minutes in an oven preheated to 200 degrees. We make sure that the rolls do not burn.

Cut the finished and chilled rolls in half.

Step 7

We start to shape the burgers. Put a leaf of lettuce on the bottom of the roll, and a ready-made and chilled cutlet on the salad. The next layer is a circle of tomato (we choose the thickness to taste), put onion rings and slices of pickled cucumber on the tomato (if you wish, you can add a circle of fresh cucumber). Pour sauce over the filling. Put the top of the roll on top. Flatten a little and put the finished burger on a plate. We form the remaining burgers.
