Beef baked with eggplants in the oven turns out to be incredibly aromatic, tasty and tender. It is very easy to learn how to cook this unusual dish, for this you do not need any special culinary knowledge.

Ingredients:

  • 2 medium eggplants;
  • 1 large onion head;
  • 4 tablespoons olive oil
  • 6 ripe medium sized tomatoes;
  • 500 g of beef;
  • 4 garlic cloves;
  • 1 teaspoon each of basil, oregano and thyme;
  • fresh mint leaves (to decorate the finished dish);
  • salt and spices.

Preparation:

  1. The eggplants should be rinsed well, the stalk should be cut off, and then cut into circles of medium thickness. After that, they need to be salted quite a bit and wait a third of an hour. Then these vegetables are washed in running cold water and dried. This will get rid of the unpleasant bitter taste.
  2. Prepare a baking tray. To do this, it must be thoroughly greased with oil. Then the eggplants are evenly placed in a baking sheet. Sprinkle them with olive oil on top and send them to a preheated oven for about a third of an hour. As a result, the core of the eggplant should be quite soft, and the edges should be a little crispy.
  3. Cut the pre-washed beef into small pieces and mince. In order for the minced meat to turn out more tender, it must be chopped twice.
  4. Pour quite a bit of vegetable oil into the pan and place it on a hot stove. Then add the peeled, washed and finely chopped onion into it. It is fried over medium heat until golden brown. Then the onion is mixed with the ground beef.
  5. After the minced meat is slightly browned, you need to add finely chopped tomatoes into the pan, from which you must first remove the skin by pouring boiling water over them. Add chopped garlic cloves, oregano, basil, and thyme. Then add the required amount of ground black pepper and salt.
  6. If during the stewing process all the juice evaporates, then be sure to pour in a little water or broth. Stew vegetables with minced meat for about a third of an hour.
  7. Then cover the bottom of the baking dish with eggplants, and put the prepared ground beef on top of them. Bake in a preheated oven for about 25 minutes.
