Step 1

Wash and peel 3 large carrots and 1 small onion. Grate the carrots with a Korean grater and place them in a large bowl. Lightly salt the carrots and rub them between your hands. Leave it on for a while to let the juice stand out.

Step 2

Cut 2 cups of eggplant into small cubes. Fry it until tender in a little vegetable oil. Cut the onion into half rings. Heat vegetable oil in a skillet and fry the onions in it.

Step 3

Take a portion of the grated carrots with your hand, squeeze the juice out of it and transfer to another bowl. Process all carrots in this manner. Place sautéed eggplant and onions in the carrots. Add 2 minced garlic cloves and mix.

Drizzle over vegetables with 1-2 tablespoons of vinegar. Take any vinegar you like: table vinegar, apple cider vinegar, wine vinegar. You can cook Korean carrots without vinegar.

Step 5

Heat vegetable oil to smoke. Put 0.25-1 teaspoon of spices in it. Use white, red, black, cayenne pepper. Add a pinch of coriander, basil, curry, nutmeg to it. You can use ready-made Korean carrot seasoning.

Step 6

Remove the oil from the heat as soon as you add the spices. Pour it immediately into the bowl of carrots and mix everything well. Delicious Korean carrots are ready.
