Ingredients:

- beef tenderloin - 800 g;

- fresh carrots - 800 g;

- onions - 2 pcs.;

- fresh tomatoes - 2-3 pcs.;

- garlic - 2 cloves;

- beef broth - 1 l;

- orange juice - 1/3 cup;

- vegetable oil - 3 tablespoons;

- salt and pepper to taste.

Cut the beef tenderloin into large pieces. Peel the onion, chop smaller. Wash the carrots, peel and cut into 0.5 cm thick slices. Chop the garlic with a knife. Pour boiling water over the tomatoes, peel them off and cut into cubes.

Pour vegetable oil into a deep frying pan and, when it boils, put the chopped meat and fry over high heat until golden brown. Add chopped onions and sauté with the meat for 5-10 minutes. Reduce heat. Pour in orange juice, let it simmer for 2-3 minutes. Add carrots, tomatoes, garlic. Pour in the broth (if there is no meat broth, use vegetable broth), salt and pepper, bring to a boil, cover and simmer over low heat until tender (the meat should become soft). Serve with mashed potatoes.
