Any meal usually ends with a dessert - a sweet dish. However, everyone knows that sweets are often not the healthiest food. Is it really necessary to limit yourself? In no case!
Sweet is not necessarily harmful
What exactly do sweet desserts harm the body? First of all, sweet pastries are high in calories and carbohydrates. In second place is "sweet white death" - sugar. A person is used to the fact that sweet is necessarily sugar and flour. And this is a mistake.
Should I sweeten fresh raspberries? Do red grapes need sugar? Is it necessary to dip a banana in honey? Many such delights will not even occur to them, because the listed products are sweet in themselves. And when an experienced housewife makes jam from raspberries and other sweet fruits, she adds sugar there not for taste, but for preservation.
And if you cook raspberries without sugar, using lemon as a preservative? Such jam can also be stored for a long time, but it is many times more useful.
You can also cook compotes for 2-3 days - for a drink made from rose hips, apples, peaches and apricots, sugar is practically not needed. On the contrary, the use of sugar "kills" the natural taste and aroma of the sweet fruit.
And of course, these sugar-free jams will be an excellent base for healthy baked goods.
If sugar is still needed?
Of course, making a sweet citrus dish without sugar is difficult. But sugar is not the only one that gives a sweet taste to dishes. There is also glucose, fructose, xylitol, cyclamate, stevia. It is these sugar substitutes that will make not only jams, compotes, mousses and jellies more useful, but also baked goods.
How can I reduce the amount of carbohydrates in baked goods?
Of course, it is difficult to make dough without flour. Although there are alternative and original options to grind buckwheat in a coffee grinder, to make dough from semolina or ground rolled oats. But baking from such a dough is a little more difficult, although the baked goods are tastier. For example, semolina and rolled oats are a little sweet on their own - you don't have to add sweeteners to them.
Yeast is the most unhealthy ingredient in the dough, if you remove it, then even flour dough will be considered dietary.
There are two old ways of fermenting fluffy dough without yeast
1. Kefir sourdough dough. In the old days, they took yogurt or just sour milk, diluted the batter (dough) and put it in a warm place for a couple of hours. After two hours, the dough was kneaded with flour to the desired viscosity and the products were baked. Although the dough will be fluffy on a fermented milk basis in any case, if you add a little soda.
2. The second method is even more ancient. Flour with water and a small amount of sugar is diluted to a thick sour cream and put in a warm place for 15-20 hours. Microorganisms in the flour begin to ferment and we get the most real yeast-free dough.
