Step 1

Peel the potatoes and cut each root vegetable into six pieces. Boil the potatoes in a little water. As soon as the potatoes boil, add the smoked ribs to it and stir. Peel and chop the onion and grate the carrots. Fry the onions in a pan until tender, add the carrots, grated on a coarse grater and simmer for six minutes. After the potatoes are cooked, add the onion and carrot stir-fry to the potatoes. Mix everything thoroughly, salt, add a few bay leaves, and simmer over low heat for 10 minutes. Sprinkle with herbs and serve.

Smoked ribs can be cooked in the oven. Pour a sauce based on tomato paste or vegetable oil over them and leave for two hours to marinate. Wrap the marinated ribs in foil and place on a baking sheet. Pour some water into a baking sheet and place it in a preheated oven. Bake the dish for two hours, periodically adding water. After cooking, remove the baking sheet and remove the ribs from the foil. Serve with a side dish.

Chop one head of sauerkraut into slices or use chopped sauerkraut. Cut the smoked ribs into pieces about 2 cm thick. If the ribs are very salty, soak them in water first. Take a shallow saucepan and brush the bottom with melted bacon. Arrange all the cabbage and all the ribs in rows, cover with a glass of water, and add the lard. Put the dish to simmer for three hours. Season with pepper before braising. If the cabbage becomes dry during stewing, then add a little water. Garnish with herbs before serving.
