Blueberries are a rich source of so-called anthocyanidins - the most powerful of all natural antioxidants. Blueberry pancakes taste great and are also very beautiful to look at. This tasty and nutritious dish can be served as a main meal or as a dessert.

- Ingredients:
- 200 gr. fresh blueberries
- 3 cups wheat flour
- 1 bag of dry yeast (25 gr)
- 100 g spread
- 1 glass of milk
- ½ packet vanilla sugar
- 2 tablespoons sugar
- ½ teaspoon salt
- odorless vegetable oil for frying
Instructions
Step 1
Gently mix the blueberries with 2 tablespoons of sugar so as not to knead the berries.
Step 2
Melt the spread (can be replaced with margarine or butter) over low heat, without bringing to a boil.
Step 3
In ½ cup of warm milk (30 degrees) dissolve 0.5 teaspoon of sugar, add a packet of dry yeast (25 grams of "Saft moment" or similar). After 5-10 minutes the yeast begins to "walk" and a foam appears on the surface.
Step 4
Sift the flour, add yeast and the remaining half a glass of milk, melted spread, salt to it and mix everything thoroughly until smooth.
Step 5
Add blueberries with sugar and vanilla to the dough last. Gently combine the berries with the dough so as not to crush.
Step 6
The dough should be slightly thicker than for regular pancakes, as the blueberries will still produce juice. If the dough is too thin, the pancakes may not rise well.
Step 7
Cover with a towel and place in a warm place for lifting.
Step 8
After 30 minutes, heat a frying pan over a fire, add vegetable oil and begin to fry over medium heat.
Step 9
Sour cream, honey or blueberry syrup can be served with the pancakes. Bon Appetit.
