The sweetness of raisins goes well with the sourness of dried cranberries. This is a great combination for home baked goods. Delight your household with a cupcake with raisins and cranberries.
It is necessary
- - 240 g flour;
- - 175 g each of butter, sugar;
- - 100 g of raisins, dried cranberries;
- - 3 eggs;
- - a bag of vanilla sugar;
- - a pinch of salt;
- - 1/2 teaspoon baking powder.
Instructions
Step 1
Remove the butter beforehand to make it very soft. Beat the softened butter with granulated sugar, beat in large eggs one by one. Add vanilla sugar and salt and stir. Add flour, sifted with baking powder, mix well with a spatula.
Step 2
Rinse the raisins with dried cranberries, pat dry on a paper towel, sprinkle with flour and gently stir into the dough so that it does not fall off afterwards. For this recipe, you can take fresh cranberries, but frozen ones will not work - they have too much moisture in them. You can also experiment with combinations - in addition to cranberries, add any other berries.
Step 3
Take a cake pan, round or rectangular - it doesn't matter. Coat the pan with butter. Place the dough in it.
Step 4
Bake the raisin and cranberry muffin for about 1 hour in an oven preheated to 180 degrees. Due to the size of the pan and your oven, cooking times may differ, so check that the cake is done with a wooden stick after half an hour of baking. Cool the finished cake slightly without removing it from the mold. Then cut into portions, serve with warm unsweetened tea.
