Instructions

Step 1

Rabbit soup

Cook rabbit soup. Peel the beets and cut into cubes. Put in ready-made broth, bring to a boil. Cook until the beets are half cooked.

Step 2

Cut the rabbit fillet into small pieces, chop the onion. Place the meat and onions in a pot of beets, add the spices, bay leaf and cook until the beets soften. Then add greens. After about 7-10 minutes, pour in the red wine, bring to a boil and turn off immediately. Serve with sour cream.

Stewed rabbit fillet with sour cream

Cut the meat into portions. Fry in vegetable oil. Transfer to a deep, refractory dish.

Step 4

Cut the vegetables: the onion into half rings, and the carrots into medium-thick strips. Simmer them a little in butter. The fire should be small. Place the sautéed vegetables on top of the fillets. Add spices, herbs, minced garlic and bay leaves.

Heat sour cream in a water bath. Pour gently into a bowl of meat.

Preheat oven to 180 degrees C. Move container there. For the first 20-25 minutes, water the fillet with the juices it gives itself when stewing. Then cover with a lid, reduce the temperature to 160 degrees C and leave for another 25-30 minutes.

Rabbit with sesame seeds

Lightly beat the fillet and cut into small pieces. Toss with soy sauce and spices.

Step 8

Add chopped garlic. Leave to marinate for 20-30 minutes. Remove the rabbit from the marinade and dry with a paper towel.

Step 9

Dip the slices in sesame seeds and sauté in vegetable oil. Sprinkle with chopped herbs before serving.
