Rabbit meat is good for both adults and children. It is widely used in the preparation of dietary meals, because proteins in its composition are much better absorbed by the human body than proteins of pork or beef. Rabbit meat refers to white meat. It is not greasy, contains little cholesterol, while it is rich in vitamin PP, calcium, phosphorus and magnesium. In addition to its special dietary properties and nutritional value, rabbit meat is prepared simply and quickly enough. It can be combined with a variety of products and can be subjected to any heat treatment. Delicate rabbit meat is good both in soups and in main courses.

Instructions
Step 1
Rabbit soup
Cook rabbit soup. Peel the beets and cut into cubes. Put in ready-made broth, bring to a boil. Cook until the beets are half cooked.
Step 2
Cut the rabbit fillet into small pieces, chop the onion. Place the meat and onions in a pot of beets, add the spices, bay leaf and cook until the beets soften. Then add greens. After about 7-10 minutes, pour in the red wine, bring to a boil and turn off immediately. Serve with sour cream.
Step 3
Stewed rabbit fillet with sour cream
Cut the meat into portions. Fry in vegetable oil. Transfer to a deep, refractory dish.
Step 4
Cut the vegetables: the onion into half rings, and the carrots into medium-thick strips. Simmer them a little in butter. The fire should be small. Place the sautéed vegetables on top of the fillets. Add spices, herbs, minced garlic and bay leaves.
Step 5
Heat sour cream in a water bath. Pour gently into a bowl of meat.
Step 6
Preheat oven to 180 degrees C. Move container there. For the first 20-25 minutes, water the fillet with the juices it gives itself when stewing. Then cover with a lid, reduce the temperature to 160 degrees C and leave for another 25-30 minutes.
Step 7
Rabbit with sesame seeds
Lightly beat the fillet and cut into small pieces. Toss with soy sauce and spices.
Step 8
Add chopped garlic. Leave to marinate for 20-30 minutes. Remove the rabbit from the marinade and dry with a paper towel.
Step 9
Dip the slices in sesame seeds and sauté in vegetable oil. Sprinkle with chopped herbs before serving.
