Cutlets are different. You can make steam, diet low-fat, chops, or any other. And it is not necessary that the minced meat contains only meat, excellent cutlets are also obtained from vegetables, for example, from carrots, potatoes or soybeans.
Cutlets "Norok"
Moldavian cutlets "Noroc" combine two types of meat at once - chicken and pork - and have an interesting cheese filling inside. For cooking, you need to take:
- 500 grams of chicken meat;
- 300 grams of pork tenderloin;
- 2 raw eggs;
- 15 tbsp. spoons of raw milk;
- 150 grams of butter;
- 75 grams of Dutch cheese;
- ¾ glasses of bread crumbs;
- 1 bunch of dill greens;
- salt, pepper to taste.
The chicken must be washed, separated from the flesh from the bones and rolled through a meat grinder. Pork meat should also be washed, divided into pieces and then grinded in a meat grinder. Then you need to mix both minced meat together and pass through a meat grinder again. In this case, you will get a more tender meat mass for cutlets.
Crack raw eggs by separating the yolks and whites into separate containers. The yolks can be immediately poured into the minced meat and mixed well. The whites must be whipped into a foam, adding a pinch of salt to them. Fifteen tablespoons of raw milk should be poured into the minced meat after the yolks, while adding ground pepper and the required amount of salt, mix the resulting meat mass. Next, you need to carefully pour the whipped proteins into the minced meat and mix all the ingredients again.
For Moldovan cutlets "Noroc", you should prepare the cheese filling in advance; for this, the previously frozen butter should be grated on a coarse grater. Dutch cheese also needs to be grated and then mixed with butter shavings. Rinse dill greens, shake off excess moisture and chop finely, add dill to the filling, mix everything.
At this stage, you can already form small cakes from minced meat, put a little filling in the center of each meat cake, then pinch the edges of the future cutlet so as to get an oval shape.
Cutlets "Nork" should be propaned in breadcrumbs and fried in a large amount of fat on both sides, then put into a deeper container, pour 1 cup of boiling water on the bottom of the container and close the lid, put in the oven and stew the cutlets for 5-6 minutes.
Delicious cutlets can be made with mixed minced meat - potatoes and chicken liver.
Cutlets "Delicate"
For cooking, you need to take the following ingredients:
- 500 grams of raw chicken liver;
- 1 kilogram of raw potatoes;
- 2 heads of onions;
- 2 raw eggs;
- 1 glass of flour;
- 100 grams of ghee;
- pepper and salt to taste;
- 150 ml of vegetable oil for frying.
Raw chicken liver must be thoroughly rinsed and freed from inedible veins and bile ducts, then passed through a meat grinder. The onion heads should be peeled and washed, then divided into parts and also passed through a meat grinder, add the onion mass to the ground chicken liver. The tubers of raw potatoes must be peeled, washed, then the potatoes should be grated on the finest grater and the potato mass must be added to the ground liver.
In the same mass, you need to drive raw eggs, add ground pepper and salt to your taste, mix the minced meat. Next, you need to mix a glass of flour with ghee, which should be pre-softened at room temperature. Stir the mixture thoroughly and add it to the liver-potato mince. Stir the minced meat and form small cutlets, fry them under the lid in a pan in vegetable oil.
