Fried pies are made from yeast dough - rich or sour, filled with any product - from mashed potatoes and mushrooms to sweet jams and fried in more vegetable oil or fat. Of course, this is not the healthiest food, but sometimes it is nice to treat yourself to something delicious!

- For the test:
- 1 kg of flour;
- 1 glass of milk;
- 40 g fresh yeast or 2 dry sachets;
- 125 g butter;
- 2 yolks;
- 1 egg;
- 3 tbsp. tablespoons of sugar;
- salt.
- For filling:
- 1 kg of potatoes;
- 0.5 kg of mushrooms;
- 2 onions;
- 1 head of cabbage;
- eggs
- milk
- butter for mashed potatoes - to taste;
- salt.
Instructions
Step 1
Prepare a dough for the dough: add yeast and sugar to warm milk (about 37-38˚С). Sift half the flour with salt and pour the prepared mixture into it. Stir the resulting mixture, cover with a towel and put in a warm place for 1 hour.
Step 2
When the dough is suitable, add softened butter, yolks and an egg to it - they should be at room temperature. Then add the remaining flour. Pour out the dough thoroughly - it should become smooth, not sticking to your hands. Cover the dough with a towel and heat for another hour.
Step 3
When the dough comes up, knead it and leave it for another half hour or hour.
Step 4
While the dough is coming up, prepare the filling. Peel the potatoes, cut into large pieces, boil in salted water and mash. You can add an egg, warm milk or butter to it if desired.
Step 5
Peel 1 onion, chop finely and fry in vegetable oil. Mushrooms (it is best to use forest mushrooms, for example, boletus, boletus, etc., but you can also take champignons), peel, cut into small pieces and fry with the onion until tender. Combine mashed potatoes with toasted mushrooms, mix thoroughly.
Step 6
Cut the cabbage into short strips, salt, mix thoroughly and remember a little so that it becomes softer.
Step 7
Simmer the cabbage in vegetable oil along with the remaining onion until tender.
Step 8
Roll out the dough on a floured table and cut into circles. Put the filling in the middle of each - cabbage or mashed potatoes with mushrooms. Pinch the pies.
Step 9
Fry the patties in plenty of oil until golden brown on each side.
Step 10
Put the finished pies on a paper towel to drain off excess fat. Serve slightly chilled.
