Despite the fact that vegetarianism is becoming more widespread everywhere, it is still not easy for a vegetarian to eat in average cafes. Therefore, you can pamper your friends and yourself with a modified version of fast food - a wonderful meatless shawarma.

Shawarma came to us from Arab countries, and today it is one of the most common types of fast food, which, along with American hot dogs, is sold almost everywhere. You can cook it with any kind of meat, but it can also please vegetarians. Vegetarian shawarma is the tastiest and easiest dish to prepare, which is also very quick to make. In addition, it is suitable not only as a snack between meals, but also as a highlight of your festive table.

Shawarma for vegetarians is an ideal recipe for a quick and fairly light snack, especially in a situation when guests are already on the doorstep and there are no treats for them. In addition, it is easy to prepare it in nature.

Lavash for such a shawarma must be bought fresh, it must be elastic. If you take out the lavash from the fridge, which has been lying around since time immemorial, you will not be able to make a shawarma - it simply will not curl.

Elementary recipe

To make lavash you will need:

- thin pita bread;

- onion;

- carrot;

- a small head of cabbage;

- greens;

- tomatoes;

- sunflower oil, spices to taste.

Cut the onion into half rings and fry until golden brown. Add carrots chopped on a coarse grater to it and fry them for another minute. Separately chop the cabbage as thin as possible, mix it with spices, salt and sugar, add apple cider vinegar and finely chopped dill tomatoes. Combine with roasts (onions and carrots). Expand the pita bread and place part of the resulting mixture in it, tuck the bottom and roll it up in the form of a scroll.

Fried option

For three servings you will need:

- three pita bread;

- cucumber;

- large tomato;

- lettuce leaves

- cheese, 250 g (Adyghe is better);

- sour cream, 150 ml (fermented baked milk is also suitable);

- mild ketchup, 150 ml;

- 1 tbsp. l. sunflower oil;

- spices.

Stir the spices with salt, ketchup and sour cream until smooth - they will form the basis of a special and delicious sauce. Please note that it should be a little salty, so do not overdo it with spices - you should not put a lot of them, otherwise they can overpower the taste of vegetables.

Ready-made shawarma must be served immediately - if you leave it for later, the pita bread will get wet and tear.

Wash and cut the cucumber and tomato into strips. Salad (you can also use Chinese cabbage) cut into large strips or tear it with your hands. Use a fork to mash the cheese. In a preheated skillet, lightly fry the coriander and add a little cheese to it, also frying a little.

Unroll the pita bread and coat it evenly with about a third of the cooked sauce. Leaving some space at the edges, put a third of the chopped vegetables in the pita bread, and a third of the cooked cheese on top. Thus, for the second serving of shawarma, you use half of the remaining ingredients, for the third - everything else.

Fold up the edges of the pita bread and roll it up into a tight scroll. Put the resulting shawarma in a preheated pan and heat for 5 seconds, no more. It is enough that it is slightly warm - so it is much more pleasant and convenient to eat.
