Instructions
Step 1
If the pork is frozen, you need to defrost it before you start cooking.
Step 2
Peel the eggplant. Cut into cubes, season with salt and set aside for 30 minutes.
Step 3
Wash the pork with running water and cut into cubes. Put the meat in a frying pan with heated sunflower oil.
Step 4
Peel the onion and cut it into half rings. Add the onion to the pork and fry over low heat for 10-15 minutes.
Step 5
Peel the carrots and finely grate. If there is no grater, cut the carrots into thin strips. Add carrots to the pan with meat and onions and simmer for 5-7 minutes.
Step 6
Peel the courgette and cut into cubes. Rinse the eggplant in cold running water. Add the zucchini and eggplant to the skillet. Simmer for another 15 minutes.
Step 7
Cut the mushrooms into slices. Cut the tomato and bell pepper into cubes. Add tomato, mushrooms and pepper to the pan with meat and vegetables. Simmer for 10 minutes.
Step 8
Chop the garlic finely. Chop the dill and parsley. Add garlic and herbs to the pan. Season with salt and pepper. Add bay leaves. Simmer for another 5 minutes.
